Rachael Rays Special Rice.

I have made this several times and its always a hit. I don't always have currants and I don't miss them in the final dish. The directions are for stove top but I like it better in a rice cooker. I serve this with lemon chicken and a salad. Enjoy!

Ingredients

3 c
water
1 1/2 c
white rice
2 Tbsp
butter
1/4 c
golden raisins
2 Tbsp
currants
1 tsp
lemon zest
1 tsp
cumin seeds
1 tsp
chopped chives
3 oz
toasted sliced almonds

Step-By-Step

1Bring water to a boil.

2Add butter, rice, cumin, lemon zest, raisins, currants.

3Bring back to a full boil. Cover and reduce heat to a simmer. Simmer for 20 minutes.

4Remove from heat and add chives. Fluff with fork. Put on serving platter. Sprinkle with almonds. Serve and enjoy.
