Ingredients

1 c
long-grain white rice (preferably uncle ben's brand)
1/4 c
fresh lemon juice
1/4 c
fresh orange juice
2 c
water
1/2 tsp
lemon peel, shredded
1/2 tsp
orange peel, shredded

Step-By-Step

1Place all of the ingredients except the lemon peel and orange peel in a 2-quart pot. Cover and bring to a boil over high heat, then reduce heat to low, and simmer for about 20 minutes, or until all of the liquid has been absorbed.
2Stir in the lemon peel and orange peel, and serve as is or with plain nonfat yogurt.
