Ingredients

1/4 c
onion, chopped
2 c
cooked rice
1 can(s)
water chestnuts, sliced
1 c
peas, thawed
1 c
carrots, shredded
3
eggs
2 Tbsp
soy sauce
2 Tbsp
peanut oil

Step-By-Step

1Saute onion in peanut oil until onion is tender.

2Stir in rice, chestnuts, peas and carrots.

3Cook over low heat for 8-10 minutes stirring frequently.

4Stir in beaten eggs, and cook 3 minutes longer stirring occasionally. Stir in soy sauce.

5Cooked cubed pork, beef or lamb can be added for varieties.
