Door Country Wild Rice Salad

1 1/2 c
cooked wild rice
1/2 c
cooked brown rice
1/2 c
sliced green onions
1 c
chopped celery
1 c
snow peas, cut in half (fresh)
3/4 c
dried craisins
8 oz
can sliced water chestnuts, drained
1 c
coarsely choppd cashews, toasted


1/2 c
canola oil
1 1/2 tsp
soy sauce
1/2 c
wine vinegar
1/2 c
sugar or splenda
1/2 tsp
granulated garlic
1/2 tsp
ground ginger


1Mix all salad ingredients together except cashews. Just before serving, add dressing and cashews. Stir into salad and serve.

2Note: To make a larger dish, I add more brown rice and some of the other ingredients like celery, snow peas, etc.
