Ingredients

2 tsp cayenne pepper
1 1/4 tsp each sweet paprika and black pepper
1/2 tsp each,dried thyme leaves and dried oregano leaves
1 Tbsp cooking oil
1 Tbsp butter
3 c finely chopped mushrooms
1/2 c each,finely chopped onions,celery and green bell pepers
3 tsp minced garlic
2 bay leaves
3 c chicken stock
1 1/2 c white rice

L's Notes:

This is a very hot and tasty dish.My family loves it,but if you don't like spicy dishes,use 1 teaspoon of cayenne pepper instead.I sometimes use 1/2 lb ground pork and 1/4 lb chicken gizzards,ground up instead of mushrooms.

WOW!!! This is fantastic! A huge explosion of flavor!! This dish if one of the best I have ever had - absolutely wonderful and a keeper for sure. I cannot wait to make it again for the next potluck get together.

I used quick-cooking rice and cooked sweet sausage to great results. Also, just 1 tsp of cayenne was plenty spicy for my wimpy palette.

Next time I will double the recipe - It goes fast!

 

Directions

Combine seasonings.Set aside.Saute vegetables in oil,add seasonings,cook until vegetables are tender.Add bay leaf and stock,cook 5 mins.Add rice,stir well,bring to a boil,turn heat to lowest setting,cover pan and cook 20 mins.Remove bay leaves.

I like this recipe, along with your tips. I don't like chicken livers, which is what I see in most dirty rice recipes and I think must be traditional? Thanks for the recipe, I've added it to my collection.

NICE recipe...a vegetarian dirty rice...not everyone like the traditional livers or gizzards in dirty rice...Thanks for sharing!

well I may have to cut back on the cayenne...not for me and my daughter because we like spicy...but my son is a wimp when it comes to spice :o)

This looks delicious.Think I'll make it for dinner tonite. You mention bay leaves in the directions, but I don't see them in the ingred list - is it 1-2 leaves?

LaWanda, this was delicious.Everyone loved it! The mushrooms add such a delicious flavor.I admit we cut the cayenne way back, because noone likes it that hot but me.:0 I also added some ground turkey to make it a full meal, but it would have been perfect without the meat, as well. I have a feeling it will be a family favorite for a very long time!
