This is a very hot and tasty dish.My family loves it,but if you don't like spicy dishes,use 1 teaspoon of cayenne pepper instead.I sometimes use 1/2 lb ground pork and 1/4 lb chicken gizzards,ground up instead of mushrooms.

WOW!!! This is fantastic! A huge explosion of flavor!! This dish if one of the best I have ever had - absolutely wonderful and a keeper for sure. I cannot wait to make it again for the next potluck get together.

I used quick-cooking rice and cooked sweet sausage to great results. Also, just 1 tsp of cayenne was plenty spicy for my wimpy palette.

Next time I will double the recipe - It goes fast!


2 tsp
cayenne pepper
1 1/4 tsp
each sweet paprika and black pepper
1/2 tsp
each,dried thyme leaves and dried oregano leaves
1 Tbsp
cooking oil
1 Tbsp
3 c
finely chopped mushrooms
1/2 c
each,finely chopped onions,celery and green bell pepers
3 tsp
minced garlic
2 bay leaves
3 c
chicken stock
1 1/2 c
white rice

Directions Step-By-Step

Combine seasonings.Set aside.Saute vegetables in oil,add seasonings,cook until vegetables are tender.Add bay leaf and stock,cook 5 mins.Add rice,stir well,bring to a boil,turn heat to lowest setting,cover pan and cook 20 mins.Remove bay leaves.

Ann Bennett, I'm just responding because I am on here and no one else has commented since 2013. I would use fresh button mushrooms and use the sausage that you like best. Dirty rice is usually a little spicy; so you could use spicy sausage, or not. I am not familiar with the area you live in; so I don't know what sausages are sold in your area. I didn't see sausage listed in the ingredients for this recipe; but most dirty rice does have sausage in it. L D windella (the author of this recipe) even mentioned using chicken gizzards (if you like those, I think Chicken liver would be good as well). Hope that helps.

I would like to prepare this rice.
Could someone let me know what is a good kind or brand of sausage would be best in it.........Also what kind of mushrooms would be really good to use..........

Congrats on conquering "Dirty Rice"! Being from New Orleans, I love seeing other people's perception of our cuisine. For the gizzards, I use "Savoir's Dressing Mix" (everything is ground for you). I look forward to teying this recipe :-)

We like the heat but I only use one bay leaf. It is a real keeper and so darn easy.
