Lad's Dirty Rice

|2 tsp||cayenne pepper|
|1 1/4 tsp||each sweet paprika and black pepper|
|1/2 tsp||each,dried thyme leaves and dried oregano leaves|
|1 Tbsp||cooking oil|

|1/2 c||each,finely chopped onions,celery and green bell pepers|
|3 tsp||minced garlic|
|2 bay leaves|
|3 c||chicken stock|
|1 1/2 c||white rice|
This is a very hot and tasty dish.My family loves it,but if you don't like spicy dishes,use 1 teaspoon of cayenne pepper instead.I sometimes use 1/2 lb ground pork and 1/4 lb chicken gizzards,ground up instead of mushrooms.
WOW!!! This is fantastic! A huge explosion of flavor!! This dish if one of the best I have ever had - absolutely wonderful and a keeper for sure. I cannot wait to make it again for the next potluck get together.
I used quick-cooking rice and cooked sweet sausage to great results. Also, just 1 tsp of cayenne was plenty spicy for my wimpy palette.
Next time I will double the recipe - It goes fast!
