Coconut Rice with Lime

My family loves ethnic food and this is a perfect accompaniment to Thai curry.

Ingredients

1 1/2 c
jasmine rice
1 can(s)
coconut milk, unsweetened
1 3/4 c
water
1 tsp
salt
grated peel of 1 lime

Step-By-Step

1In a 2 1/2-3 quart sauce pan, bring rice, milk, water, and salt to a boil over medium high heat
2Stir, reduce heat to lowest setting and simmer rice, stirring occasionally, for 15 minutes or until all liquid is absorbed.
3Stir in lime peel and serve immediately.
