Ingredients

1 c
jasmine or basmati rice
2 c
water
1 Tbsp
oil
2 Tbsp
fresh cilantro choppec
2 Tbsp
lime juice
1 tsp
salt

Step-By-Step

1Saute the rice in oil for 3 minutes. Add the water and bay leaf and bring to a boil. Reduce heat and cover and simmer 20 minutes until water is absorbed. Turn off heat and let rice sit covered 15 more minutes.

2Mix the salt with the lime juice. Remove and discard bay leaf. Mix lime juice and cilantro in the rice. Fluff with fork.
