Ingredients For bahamian peas and rice

1/4 cbutter

2 1/2 ozthick sliced bacon, diced

1 lgwhite onion, diced

1celery stalk with leaves, diced

1 lgripe tomato, diced

3 oztomato paste

sea salt and pepper to taste

1 can(15 ounce) chick peas, with liquid

1 2/3 cwater
-
1 1/2 cuncooked long grain white rice

1fresh sprig thyme, chopped
How To Make bahamian peas and rice

1Add butter to a large, heavy saucepan over medium high heat and add the bacon, cook until evenly brown. Stir in onion and celery, and cook until tender.

2Mix in tomato, tomato paste. Season to taste with salt and pepper. Reduce heat to low, and continue cooking about 15 minutes.

3Add chick peas and their liquid, water, rice, and thyme to the pan. Bring to a boil, cover, and reduce heat to low. Cook 40 - 45 minutes or until all liquid is absorbed. Fluff rice with a fork and serve.
