Ingredients For bahamian peas and rice

  • 1/4 c
    butter
  • 2 1/2 oz
    thick sliced bacon, diced
  • 1 lg
    white onion, diced
  • 1
    celery stalk with leaves, diced
  • 1 lg
    ripe tomato, diced
  • 3 oz
    tomato paste
  • sea salt and pepper to taste
  • 1 can
    (15 ounce) chick peas, with liquid
  • 1 2/3 c
    water
  • 1 1/2 c
    uncooked long grain white rice
  • 1
    fresh sprig thyme, chopped

How To Make bahamian peas and rice

    Add butter to a large, heavy saucepan over medium high heat and add the bacon, cook until evenly brown. Stir in onion and celery, and cook until tender.

    Mix in tomato, tomato paste. Season to taste with salt and pepper. Reduce heat to low, and continue cooking about 15 minutes.

    Add chick peas and their liquid, water, rice, and thyme to the pan. Bring to a boil, cover, and reduce heat to low. Cook 40 - 45 minutes or until all liquid is absorbed. Fluff rice with a fork and serve.
