Tuna Stuffed Potatoes

This came from the "My Great Recipes" collection which I subscribed to in the mid-80's. It was a favorite dish of my oldest son who passed away from muscular distrophy in 2003 at age 13.

You can substitute other cheeses, we usually use cheddar because we're all addicted to it. ;)

Ingredients

4
large hot baked potatoes
1/2 c
hot milk
2
green onions, minced
1
egg
2 Tbsp
butter
1 tsp
salt
1 dash(es)
pepper
1
medium tomato, diced
1 can(s)
tuna (7-1/2 oz), drained
2 Tbsp
grated parmesan cheese
parsley for garnish

Step-By-Step

1Heat oven to 400 degrees.
2Cut thin slice from flat side of each potato. Scoop inside of potatoes into bowl. Mash, add hot milk, and whip until fluffy.
3Add green onions, egg, and butter, whipping well.
4Add salt & pepper, then fold in tomato and tuna.
5Pile back into potato skins, mounting high. Place on cookie sheet.
6Bake for 10 minutes or until heated through.
