Ingredients For "the duke" casserole

2 lbground beef
-
1 pkgtaco seasoning mix, reduced sodium
-
6 ozsour cream, fat-free
-
6 ozmayonnaise, fat-free
-
10 ozcheddar cheese, shredded, divided
-
1 lgonion, sliced
-
2 cbisquick mix
-
2 candiced tomatoes, drained, divided
-
8 ozmushrooms, sliced
-
1 - 4 oz canjalapeno peppers, sliced, mild or hot
- SERVE WITH:

mashed potatoes
How To Make "the duke" casserole

1Preheat oven to 325 degrees F. Brown ground beef & add taco seasoning & water, according to packet instructions; set aside.

2In a separate bowl, combine sour cream, mayonnaise, 4 ounces of cheddar cheese, & 1/2 of the onions; set aside.

3Stir biscuit mix & water (directions on box) to form soft dough. Pat dough on the bottom & 1/2" up the sides of an 9" x 13" greased casserole dish.

4Saute remaining onions & mushrooms until slightly tender.

5On top of biscuit mix, evenly distribute ingredients in the following order: ground beef, tomato, mushrooms, onions, jalapeno peppers, sour cream mixture & end with remaining shredded cheese.

6Bake 30 - 40 minutes or until edges of dough are lightly browned. Let rest 5 minutes before serving.

7Serve with mashed potatoes, if desired.
