This is an easy way to have Sweet Potatoes . My Mom taught me this recipe. She also said that Beauregard yams have better flavor than sweet potatoes- and she's right!
Mom didn't use measurements for the butter or brown sugar, just eyeballed it!
Boil yams with skin on, until you can stick a fork in them, but not done all the way. As soon as they have cooled enough to handle, peel off skin, slice length wise- thin slices
Preheat oven to 350 F.
Melt butter in a pan on the stove, add brown sugar and yam slices. Cook until warmed through, place in a casserole dish, pour brown sugar/butter sauce on top, cook in the oven for about 20-30 minutes.
