Ingredients For sweet potato streusel ring

3good size sweet potatoes

2-3 slicebacon
-
1/4 tspsmoked paprika

1/4 tspea. salt and pepper

1 tspcinnamon

1/2 cstreusel topping (see below)
- STREUSEL TOPPING
-
1/2 cbrown sugar
-
1/3 cflour
-
1/4 ccold butter
-
2/3 cnuts (pecans)
How To Make sweet potato streusel ring
-
1STREUSEL TOPPING-Use either a food processor and pulse or use a fork and mix together by hand. Add sugar and flour to bowl or processor. Cut cold butter into little cubes and add. Work mixture together till it resembles a coarse mixture, then add chopped nuts and mix well. Set aside and prepare potatoes.

2Peel potatoes and slice very thin with a mandolin. Place on a cookie sheet and sprinkle with a mixture of 1/4 tsp smoked paprika, 1/4 tsp ea. salt and pepper and 1 tsp cinnamon. I do it this way to make sure I get the seasoning more evenly distributed. Now return to bowl. Coat with 1/2 c brown sugar by tossing.

3Using a med. size baking dish or a 10" cast iron skillet, spray the bottom and sides with non stick spray, then lay the potatoes around the pan (or in straight lines if using square baking dish).

4Sprinkle about 1/2 c of the streusel topping (or more) on top of potatoes and drop on pieces of diced up raw bacon. If you have any streusel topping leftover place in refrigerator for another use.

5Bake 325º covered for about 25 min then uncover and bake another 25-30 min or until fork tender.
