sweet potato "souffle"

This was the first sweet potato recipe I ever had that I liked - a cousin of my husband's served it for Thanksgiving, and this is the recipe she gave me. It's almost identical to a Paula Deen recipe so I'm posting a photo of hers until I get one of my own!

Ingredients For sweet potato "souffle"

  • 3 c
    cooked, mashed sweet potatoes
  • 1 c
    sugar
  • 2
    eggs
  • 1 c
    margarine, divided
  • 1 tsp
    vanilla
  • 1 c
    brown sugar, light
  • 3/4 c
    crushed pecans
  • 1/3 c
    self rising flour

How To Make sweet potato "souffle"

    Preheat oven to 350 degrees and grease large casserole dish.

    Beat together potatoes, sugar, eggs, vanilla, and 1/2 cup margarine until smooth and fluffy. Spread in casserole and bake uncovered for 30 minutes.

    Mix brown sugar, pecans, flour, and remaining 1/2 cup margarine with fork until crumbly.

    When potatoes are done baking, add topping and return to oven for 10-15 minutes until brown and bubbly.
