Ingredients For sweet potato parmesan fries w/ dipping sauce

  • 1 wedge
    the laughing cow light creamy swiss cheese
  • 1 Tbsp
    sour cream, fat-free
  • 1/4 tsp
    ranch style dressing mix, dry
  • 1/8 tsp
    chili powder
  • 2 Tbsp
    water
  • 2 - 3 lg
    sweet potatoes
  • 1/4 tsp
    salt
  • 2 clove
    garlic, minced
  • 1 Tbsp
    olive oil, extra virgin
  • 1 tsp
    garlic powder
  • 2 Tbsp
    parmesan cheese, fat-free

How To Make sweet potato parmesan fries w/ dipping sauce

    Preheat oven to 425 degrees F. Spray 2 baking sheets with nonstick spray.

    DIPPING SAUCE: In a medium bowl, stir cheese wedge until smooth. Add sour cream, ranch seasoning, chili powder & 2 tbsp water. Whisk until smooth. Cover & refrigerate.

    Peel potatoes. Cut in half widthwise. Cut potatoes into fries. Thoroughly pat dry. Lay fries on the sheets & sprinkle with salt. Bake for 30 minutes.

    Flip fries & cook until tender on the inside & crispy on the outside, 15 minutes.

    Carefully transfer fries to a large bowl. Top with minced garlic, olive oil & garlic powder. Using two forks or spoons, gently toss to coat.

    Return fries to the sheets. Bake until minced garlic begins to brown, 2 minutes.

    Sprinkle with Parmesan cheese & serve with dipping sauce!
