This recipe is a Thanksgiving and Christmas dish at our table! Most people that I have met do not like sweet potato casseroles UNTIL they try this one! It is a must try! This recipe was given to me by my mother and I am not sure if she created it, or located it in a recipe book. Enjoy!

vac pac sweet potatoes
1 can(s)
pineapple tidbits
1 can(s)
(small) maraschino cherries
3 Tbsp
corn starch
1 c
brown sugar, firmly packed

Directions Step-By-Step

In baking dish, place sweet potatoes in dish. Open pineapple and maraschino cherries cans; reserve juice. Place pineapple and maraschino cherries on top of sweet potatoes in nice fashion.
Place reserved juice into sauce pan. Combine cornstarch and brown sugar. Stir until corn starch is mixed smoothly. Cook on medium heat until thick. Pour juice mixture on top of sweet potato dish.
Bake at 350 degrees for 30 minutes. Serve while still warm.
