Ingredients

7 c
instant mashed potatoes
1
egg, beaten
1 large
scallion, chopped
1 c
sour cream
salt
pepper
2 c
corn flakes, crushed
1/2 stick
butter, melted
onion salt

Step-By-Step

1Preheat oven to 350 degrees F.
2Combine egg, scallion, sour cream, salt and pepper.
3Make instant potatoes according to package directions, EXCEPT omit the milk; instead, add the sour cream mixture.
4Spread in baking pan.
5Toss corn flakes with butter and onion salt, to taste; spoon on top of potato mixture.
6Bake for about 20 minutes, or until the crumbs begin to brown.
