Our favorite way to eat potatoes!(Not that there's really a bad way!)

Ingredients

3 lb
potatoes, cut in 1/2-1in. pieces
1/4 c
oil(i use a combination of olive oil and butter)
1 Tbsp
salt(or to taste)
1 tsp
minced garlic(or 1/2t garlic powder)
1/2 tsp
paprika
1/4 Tbsp
coarse ground black pepper
2 Tbsp
minced fresh parsley(or 2t dried)

Directions Step-By-Step

Preheat oven to 400F. Spread the cut potatoes in a baking dish and pour oil over. Add remaining ingredients, except parsley and toss to coat. Roast for 45 min. to 1 hr. stirring gently a couple of times during cooking time, until potatoes are tender and starting to brown and crisp. Remove from oven and gently stir in the parsley.
