Got this "tip" from an accomlished chef! Fabulous!

Directions

1
Potatoes depends on quantity needed? 1/2 of total needed
2
Instant potatoes depends on quantity needed? 1/2 of total needed.
3
Boil potatoes...leave in water...while hot, add instant potatoes, milk, salt , pepper, butter. Mash by hand with masher. Mixer makes potatoes "starchy". Do not use electric mixer! More gently you mix or mash, fluffier. Chef told me this too.

This is so easy. Just use 1/2 real and 1/2 instant. No one will ever know instant is in there. Fluffy with a few "bits" of real potato. Amount you make depends on number of servings you need. Simple.

This is a great tip! I was given several bags of instant potatoes, and didn't really like them, so I tried it this way - with a little difference. I oven 'boil' my potatoes, so did not have the water. I cooked the instant (1/2 desired amount) as usual. I mashed the real potatoes, added salt, pepper and butter, but not milk, then mixed the potatoes together. Even done this way it was much easier to mash a couple of hot potatoes than the amount I needed if only real potatoes were used. And you are right - you can't taste the instant! But next time I will try it your way completely. Thanks so much for posting this!
