Roasted potatoes are one of my favorite dishes... and this definitely lives up to my expectations! Adding the salt pork was a genius move. If you happen to like your potatoes crunchy, try upping the temperature of your oven to 425 and bake for about 15 minutes. Enjoy!

Ingredients For scrumptious oven roasted potatoes

  • 2 lb
    Russet or Red potatoes
  • 4 Tbsp
    Olive oil
  • 4 Tbsp
    Butter, melted
  • 3 clove
    Chopped garlic
  • 1-2 sprig
    Fresh rosmary
  • 1/4 lb
    Salted pork
  • Pepper to taste

How To Make scrumptious oven roasted potatoes

    Preheat oven to 375F.

    Cube potatoes and put into a 3 quart casserole dish. In a cup combine melted butter and olive oil and pour over potatoes. Toss the potatoes around so they all get coated with the butter mixture. Place in the oven for 25 minutes.

    Meanwhile dice up garlic and rosemary leaves and place in a bowl along with the pepper.

    For those of you who have never used salted pork, it can be found in you grocery store in the meat section. It comes in little 4" blocks and tends to have a lot of fat, so pick out the one that has the most meat. Make sure when cutting it up that you discard most of the fat. You do want to keep some of the fat as this adds a lot of flavor. Now cut meat into small cubes and mix with the garlic and rosemary.

    Once the 25 minutes is up, take the dish out of the oven and mix in the herb/meat mixture. Put back in the oven for another 25 minutes. When ready take out of the oven and allow to cool for a few minutes.
