These baked potatoes are easy and you can vary the seasoning to accompany whatever you are serving. I like to use Fiesta Ranch Dip sprinkled lightly on these for a nice Mexican flavor too.
butter, melted, divided
minced fresh parsley
salt and pepper to taste
1With a sharp knife, cut potatoes in half lengthwise. Slice each half widthwise
six times, but not all the way through; fan potatoes slightly.
2Place in a shallow baking dish. Brush potatoes with 1/2 the melted butter.
Sprinkle with paprika, parsley, salt and pepper.
3Bake, uncovered, at 350° for 50 minutes or until tender. Drizzle with remaining butter.
