Scallop Potatoes for Two

- canola oil
- 1 onion,peeled and sliced
- salt and pepper,to taste
- 4 med. red potatoes scrubbed well(or peeled) and sliced
- 1/2 c chicken or vegetable broth
- cheese of your choice,optional
1Heat oil in a skillet.Add onions and sauté just till tender,season with salt & pepper.Add potatoes and sauté 1-2 mins. Season with salt and pepper,add broth,cover and cook on stove top 15-20 min.until potatoes are tender.
If using cheese,sprinkle with cheese,remove from heat and cover until cheese melts.
