salmon patties made with leftover mashed potatoes
My mother Daisy May Tolliver, used to make these all of the time. Using day old mashed potatoes.
- 1 c
- mashed potatoes(leftover)
- 1 can(s)
- 1/2 c
- onions, chopped
- 1 c
- bread crumbs
1Mix mashed potatoes, salmon, egg, onions.
2Form in Patties and coat with bread crumbs
3Put a little oil in pan. Put the patties in the pan. Let it cook until golden brown at the bottom, turn the patties around and cook on the other side.
4The total cooking time is between 5 and 10 minutes, depending how thick your patties are.
