Potatoes and rosemary are the best combo ever and this is a quick and easy side dish full of flavor.

Ingredients

2 lb
fingerling medley potatoes, sliced length wise
1
(16-oz) pkg mushrooms, fresh sliced or whole
3
green onions, snipped
1 tsp
rosemary garlic seasoning
1 tsp
kosher salt, coarse
1/4 tsp
pepper
2 Tbsp
white truffle oil

Step-By-Step

1Preheat oven to 400 degrees.
2Slice potatoes length wise, rinse. Place in a mixing bowl or ziploc bag, sprinkle with seasonings. Drizzle with oil and toss to combine.
3Place potatoes in baking dish, cover and bake for 40 to 45 minutes or until potatoes are tender.
