I can eat them as a meal.I like to serve them with apple sauce and yogurt.

Ingredients

4 medium
potatoe peeled and graded
1 large
egg
1/3 c
flour
1 medium
summer squash grade just the yellow
1 medium
zucchini grade just the green
1 large
onion mined
2 Tbsp
butter melted
5 medium
scallions chopped
1 bunch
parsley chopped fine

Step-By-Step

1Mix all ingredients in a bowl.
2Use a 3 ounce ice cream scoop to portion each potato pancake and cook on each side untl done.
3Serve with sour cream and apple sauce.
