This is a personal favorite for a quick go-to side dish. Besides, you can't go wrong with potatoes and cheese right?

Ingredients

1 pkg
32 oz. frozen hash-brown potatoes (thawed)
1 can(s)
cream of chicken soup
1 pkg
sour cream (8 oz)
1/2 small
onion, chopped fine
12 oz
grated sharp cheddar cheese
salt and pepper to taste
1/2 c
butter, melted
2 c
butter crakers, crushed or corn flakes cereal

Step-By-Step

1Mix potatoes, soup, sour cream, onion, salt and pepper, and half of the cheese and pour into a buttered casserole dish.
2Crush the corn flakes or crackers and mix with the melted butter. Crumble this over the potato mixture, top with remaining cheese.
3Bake at 350 degrees for 30 minutes covered, then 15 additional minutes uncovered.
