Potato and Sausage Skillet

Annie Leon

My twist on a breakfast meat and potato skillet - with a little extra seasoning and using ground turkey (leaner, and often cheaper than pork sausage).

This pairs well with egg, toast, or served as a stand-alone meal for a quick and easy dinner. It's perfect to make when you only have a few potatoes left and you're in a hurry to make dinner.

1/2 lb
ground turkey
2 small
onions, minced
1/4 tsp
2 clove
garlic, minced
1/8 tsp
fennel seed
2 lb
red potatoes, small, unpeeled and sliced thin
3/4 c
chicken broth
1 small
ancient red pepper, chopped
1 tsp
1/2 tsp
black pepper
1/2 tsp
smoked paprika
1/4 tsp
rosemary (optional)

1Heat a large, nonstick skillet over medium high heat and add ground turkey, fennel seed, garlic, onion, and cumin. Cook until meat is well browned.

2Stir in all remaining ingredients and heat to boiling. Reduce heat to medium low and simmer for 8-10 minutes - stirring occasionally, or until potatoes are tender. Let mixture stand uncovered 5 minutes to allow a light sauce to form.
