Ingredients

2 lb potatoes (either russet, sweet potatoes or yams) cut into 2 inch pieces
1 tsp salt
1 tsp garlic powder
1/2 tsp pepper
1 tsp paprika
1/4 stk margarine or butter, melted
1/4 c olive oil

Portuguese Style Roast potatoes are a hit at every party! They’re a perfect side dish for your roast beef, roast chicken, pork and delicious with your Holiday baked ham.
 
 

Directions

Place all ingredients into a large mixing bowl. Toss well to coat potatoes. Place seasoned potatoes into a medium baking pan.

Cook at 400 degrees for about 1 hour or until fork tender. Toss potatoes every 15 minutes to achieve a crispy texture.

Potatoes get a bad rap, but they are totally healthy. It's what we do with them - french fries an so on - that makes them bad. My ancestors are from Ireland and believe me, we live on potatoes. They are a healthy food and quite versatile. This is a wonderful recipe. Thanks for sharing it.

My mom a portagee herself, use to add ground red pepper to taste, also use the same spices with the ground red pepper and some ground aniseed(sp?) mix with water pour on chicken or any meat and the potatoes to the same pot...yum
