Pork chops and potato stuffing

This was a recipe my Mother-in-law prepared for her family when my husband was young, in place of Turkey for Thanksgiving, as turkey was more expensive than pork at the time.
It is one of my husband's favorite meals.
With corn and applesauce as sides,
it was very filling.
