Pea and Potato Pancakes w Lemon Sour Cream

Great change of pace side dish that is super easy to make.

Ingredients

2 1/2 lb
russet potatoes peeled and grated
1 small
onion grated
1 c
frozen peas thawed
1/4 c
fresh parsley chopped
3 Tbsp
flour
zest of 1 lemon
salt and pepper
1 large
egg
2 c
sour cream
juice of 1 lemon
1 bunch
green onons

Step-By-Step

1Squeeze as much liquid out of the potatoes and mix with the next 7 ingredients.
2Mix the sour cream, lemon juice, green onions with some salt and pepper.
3Add some oil to a large skillet. Scoop out potato mixture and drop into hot oil. Flatten with spatula and brown well on each side. Remove from skillet and drain on paper towels. Work in batches.
Serve with a dollup of sour cream mixture.
