Ingredients

3 lb
redskin potatoes, unpeeled
1 tsp
salt
1/4 stick
butter, softened
1/4-1/2 c
freshly grated parmesan cheese.
1/2-3/4 c
half and half (add last, a little at a time) to desired consistency

Directions Step-By-Step

Boil potatoes, smash, add rest of ingredients and stir. Put in casserole dish and bake uncovered for 45 minutes to one hour.
