~ My Sour Cream, Onion & Parsleyed Potatoes ~

This is a quick and easy recipe I threw together. The idea came from baked potatoes with butter and sour cream, I thought why not just mix the potatoes in the sour cream mixture, and boy did my family ever love them. Creamy and very flavorful and most of all, easy!

Ingredients

3 c
cubed, boiled potatoes - drained
1 c
sour cream
1 Tbsp
parsley paste or fresh chopped parsley
2 Tbsp
dried onion flakes
1 Tbsp
softened, butter
1 tsp
salt, or to taste
1/2 tsp
pepper

Directions Step-By-Step

Boil potatoes until fork tender. Drain

In a saucepan stir all other ingredients together. Carefully stir in hot potatoes, place on burner and heat slowly, or until the sour cream begins to bubble around the potatoes.

Serve hot! Would go well with just about any meat.
