Monika's Notes:

My 14 year old son, Alec, came up with this lovely idea....sooo delightful

wash & boil the potatoes about 20 mins... till fork tender

drain and set aside to cool, then peel

mash with all the ingredients (except, the cheese)

place in a casserole dish, top with the shredded cheese, bake at 350 degrees about 15 mins. till cheese bubbles...let cool before serving....YUM
