Your right, this is not healthy in any way whatsoever but ,oh, it's SO good or so I hear. Got the recipe from a friend who said that the 4 men at a cook out were devouring it and not wasting any time going about it, lol.

Ingredients For loaded potato casserole

8 lgpotatoes, peeled and cubed

1 csour cream
-
8 ozblock cream cheese, softened

1 pkg(1 ounce) dry ranch dressing mix

1/3 chalf and half
-
2-3 cshredded cheddar cheese
-
1/2 lbbacon, cooked and crumbled

4chopped green onions
How To Make loaded potato casserole

1Boil potatoes until just tender and drain. Mash potatoes with sour cream, cream cheese, ranch dressing and half and half.

2Spoon into a casserole dish that has been sprayed with cooking spray.

3Cover with foil and bake in a pre-heated 350 degree oven for 30 minutes.

4Uncover and sprinkle cheese and bacon on top. Bake another 5 to 10 minutes. Top with scallions and serve.
