Your right, this is not healthy in any way whatsoever but ,oh, it's SO good or so I hear. Got the recipe from a friend who said that the 4 men at a cook out were devouring it and not wasting any time going about it, lol.

Ingredients For loaded potato casserole

  • 8 lg
    potatoes, peeled and cubed
  • 1 c
    sour cream
  • 8 oz
    block cream cheese, softened
  • 1 pkg
    (1 ounce) dry ranch dressing mix
  • 1/3 c
    half and half
  • 2-3 c
    shredded cheddar cheese
  • 1/2 lb
    bacon, cooked and crumbled
  • 4
    chopped green onions

How To Make loaded potato casserole

    Boil potatoes until just tender and drain. Mash potatoes with sour cream, cream cheese, ranch dressing and half and half.

    Spoon into a casserole dish that has been sprayed with cooking spray.

    Cover with foil and bake in a pre-heated 350 degree oven for 30 minutes.

    Uncover and sprinkle cheese and bacon on top. Bake another 5 to 10 minutes. Top with scallions and serve.
