Lithuanian Kugelis a potato, bacon dish

Nancy J.'s Story

My husband was Lithuanian.
He loved my cooking! especially this dish.
This was his mothers Wisc. recipe, from the thirtys.
A restaurant in Chicago, that served this wonderful dish was Sharko"s, on W. 63 St.
Closed in the 90's.
But I think they had another one in Villa Park IL.???
I have many Polish and Lithuanian recipes, from his wondewrful family.
This is one of the best.


1/2 lb
eggs, beaten
large white potatoes
small can evaporated milk
1 -1/2 tsp
salt...pepper to taste.
1/2 c
grated ,medium onion
sour cream and or applesauce to serve

Directions Step-By-Step

Cut bacon into small pieces and fry till almost crisp.
Grate potatoes into a bowl, drain off all the liquid into a small bowl.

NOW GRANDMAS TIP: Leave the above liquid to sit, then drain off just the clear liquid .Save the thick liquid at the bottom. Return this thick liquid to the bowl of grated potatoes.
Now add the eggs, and mix well, add the evaporated milk, salt and pepper, 1/2 cup milk and the grated onions. Mix well. Pour into a greased flat pan with sides.
The height of potatoes in the pan should not be over 1-1/2 inches high.
Bake in a pre-heated 350 oven for 1-1/2 hours.
Cut into squares to serve. Welike it with sour cream , and or applesauce.
It can be cut and fried with ,eggs, and bsacon the next day!.
This is a keeper.......... if you like potatoes!

    Another keeper mo me Nancy. I used to love going to Sharko's! I don't know about Villa Park but they had sharko's east and sharko;s west.
    All the good restuarants are gone now. Do you remember Candlelight on 55th st? If you do I'm sure you would remember the green noodles they used to serve on the relish tray. They would'nt give up the recipe for them.

    Yes !! Memories.... Sharkos East is now a row of Condos!.
    I lived 2 blocks from there. I
    t was a gathering place with our friends for"Happy Hour"
    My husband and I dined there 4-5 times a week!

    .I dined at Candelight 3-4 times a month!
    Some where?.. I have the original recipe from the cook.
    for Green Noodles..Oh! they were SOOOooo GOOD.
    Now I have to find it !!.Wish me luck,it might take a while.

    Do you remember the POLISH BUFFET RESTAURANT on Pulaski Ave?.
    .around 5700West? WEST SIDE OF THE STREET.

    How about VITO NICKS Pizza around 7300 S. Pulaski? Best thin crust pizza in the world. No delivery, dine in or pickup.

    What a small world it is huh Nancy. I can't believe my luck if you could find the recipe for those green noodles. I even knew the waitress and she did'nt have the recipe. She told me that is one that they would not give out. I have a copy cat recipe for their garlic dressing. Yes, I remember the polish buffet on Pulaski. Do you remember Alywards on Kedzie ave? I don't think I am spelling it correctly. They had the piano bar. I loved that place. We probably brushed shoulders a few times! It's so nice chatting with you!

    The Fri night Fish Fry... is to die for. Catfish...YUM!!

    A gal who worked for me. Her son worked in the kitchen.
    The owners are dead now..Her son was able to give it to me.....
    He is no longer with us either.
    A lot of my friends have passed away.....
    I am like Eveready.
