Ingredients

5 lb
baby gold yukon potatoes
1 c
duke's or hellman's mayo
1/2 medium
purple (red) onion, diced fine
1 medium
lemon, the zest and juice
6 sprig(s)
fresh baby dill, pulled apart from the stems

Step-By-Step

1boil potatoes whole, then cool, then quarter into a large bowl. while potatoes are boiling...
2mix the mayo, lemon juice, lemon zest, onion, and 1/2 of the dill. gently mix together all the ingredients with sea salt and fresh ground black pepper to your taste preferrence :)
3sprinkle remaining dill on top of potato salad and enjoy!
