kim's loaded potato bake

My boyfriend and I love to cook together. Today he is making London broil and I am making the side dishes. I wanted a twist on a loaded baked potato and this is what I came up with. It turned out really good so I thought I would share it. Of course you can always adjust the seasonings to your taste.

Ingredients For kim's loaded potato bake

6large potatoes

8slices of cooked bacon, chopped into small pieces

1 tsponion powder

1 tsppaprika
-
2 ccheddar cheese, shredded

1 cgreen onion, chopped

4 Tbspolive oil
-
1/2 tspsalt
-
1 csour cream
How To Make kim's loaded potato bake

1Rinse potatoes. Cut into thin bite sized slices leaving on the skins

2Boil potatoes in a pot of water until soft but not mushy.

3Drain water.

4Put potatoes in a bowl with olive oil, onion powder, paprika and salt. Toss potatoes until evenly coated.

5In a single layer spread in baking pan. I used an 11 x 13 pan.

6Sprinkle bacon and cheese evenly over the potatoes.

7Bake at 425 degrees until cheese is melted. Approximately 10 minutes.

8Remove from oven and top with green onions and sour cream to your preference.
