Left over bake potatoes works great. I bake the potatoes in the crock pot and keep in the fridge when I need them.
I sometimes use my favorite creole seasoning

Ingredients

1 medium
baked potatoe, cubed
1-2 Tbsp
bacon drippings, or olive oil
bell pepper, cut into strips
onion, sliced
1 tsp
cumin
1 tsp
garlic powder
1 tsp
coriander
1 1/2 tsp
smoked paprika
1/8 tsp
cayenne pepper
salt and pepper

Step-By-Step

1In a bowl combine, potatoes, onion, bell peppers.
Add the spices and mix to evenly coat.
2Heat bacon drippings or olive oil over medium heat in a cast iron skillet. When hot add the potatoe mixture and brown for 2-3 minutes or until potatoes are crisp. Salt and Pepper and turn the potatoes over and cook until browned and crisp.
3Serve with a poached egg or your favorite style. top potatoes with a little sour cream and salsa.
