Mmmmm something different for breakfast!

Ingredients

  • - olive oil spray
  • 1/2 cup onion, minced
  • 1 - 2 cups shredded hash brown potatoes, thawed
  • 1 teaspoon garlic powder
  • - salt & pepper, to taste
  • 12 tablespoons butter, divided
  • 6 large eggs, slightly beaten
  • 2 tablespoons onions, diced
  • 1/4 cup green bell pepper, diced
  • - cheddar or swiss cheese, shredded
  • 1 ounce ham, diced or 6 slices bacon, cooked crisp & crumbled
  • 1 teaspoon garlic powder with parsley
  • - salt & pepper, to taste

How To Make hash brown egg nests

  • Step 1
    Preheat oven to 375 degrees F. Lightly spray a muffin tin with oil spray.
  • Step 2
    Combine potatoes, 1/2 C onion, garlic powder, salt & pepper.
  • Step 3
    Fill each muffin tin with 1/4 C of potatoes & press along the side of the tin so that it forms a nest. Place 1 Tbsp of butter in the bottom of each "nest". Bake 35 minutes or until golden brown & edges are crispy.
  • Step 4
    While nests are baking, combine the eggs, green pepper, remaining onions, garlic powder, parsley, salt & pepper in a medium bowl.
  • Step 5
    Remove nests from the oven when golden brown. Let cool 10 minutes.
  • Step 6
    Some lay some ham in each.
  • Step 7
    Fill each cup with about 3 Tbsp of egg mixture.
  • Step 8
    Sprinkle with cheese.
  • Step 9
    Return to the oven & bake an additional 17 - 20 minutes or until eggs are fully cooked.
