If you have kids that don't like veggies; try this one at Easter dinner.

The Easter Bunny sells carrots that are yellow & orange at Trader Joes-or just use regular orange ones.

This makes a very pretty and colorful side dish for Easter, or any dinner.

Notes from the Test Kitchen:
These potatoes are nice and creamy with a pop of sweetness from the carrots. We love the added color the carrots give this dish too. This would make a great side dish with any Easter dinner.

Tip: Our Trader Joes stopped carrying the suggested carrots so we substituted some of their fresh yellow and orange carrots. It turned our great!

Ingredients

5-7 large
potatoes - peeled & cut into chunks
1/2 pkg
TraderJoes frozen carrots rustica (chopped up yellow & orange carrots
1 tsp
salt
1/2 tsp
pepper
1/4-1/3 c
