Mashed potatoes are a staple in our household. Dressing them up for the holidays just seems right.

Eye appealing and tasty!

potatoes, peeled and sliced
salt and pepper to taste
2 large
eggs, lightly beaten
1 3-oz pkg
cream cheese, softened
1 small
onion, chopped fine
1 2-oz jar(s)
pimientos, drained
1 c
sharp cheddar cheese, shredded
snipped green onion tops, optional for garnish


Step 1 Direction Photo

1Using your favorite mashed potatoe recipe, prepare potatoes.

NOTE: you can use store bought mashed potatoes. Prepare according to directions.

Step 2 Direction Photo

2Stir in eggs, cream cheese, onions and pimientos; mixing well; salt and pepper to taste. Pour into a greased casserole dish; cover.

Step 3 Direction Photo

3Bake at 350 degrees covered for 30 minutes. Uncover, sprinkle cheese on top and bake an addtional 10 minutes.

4Garnish with snipped green onions or fresh parsley if desired.
