Ingredients For crispy salt 'n vinegar potatoes

6 Tbspolive oil, extra virgin

2 qtwater

2 lbred potatoes, small

1 3/4 ckosher salt
-
6 Tbspmalt vinegar
-
pepper, to taste
How To Make crispy salt 'n vinegar potatoes

1Adjust oven rack to upper middle & preheat oven to 500 degrees F.

2Set wire rack inside baking sheet & brush rack with oil.

3Bring water to a boil over medium high heat. Stir in potatoes & salt & cook until tender, about 25 - 30 minutes. Drain & transfer potatoes to wire rack; let dry 10 minutes.

4Transfer potatoes to the oiled baking sheet. Smash each potato under measuring cup until 1/2" thick. Brush potatoes with 1/2 the vinegar & season with pepper. Roast 25 - 30 minutes. Brush with remaining vinegar. Transfer to serving platter - smashed side up & enjoy!!!!
