Ingredients For crispy salt 'n vinegar potatoes

  • 6 Tbsp
    olive oil, extra virgin
  • 2 qt
    water
  • 2 lb
    red potatoes, small
  • 1 3/4 c
    kosher salt
  • 6 Tbsp
    malt vinegar
  • pepper, to taste

How To Make crispy salt 'n vinegar potatoes

    Adjust oven rack to upper middle & preheat oven to 500 degrees F.

    Set wire rack inside baking sheet & brush rack with oil.

    Bring water to a boil over medium high heat. Stir in potatoes & salt & cook until tender, about 25 - 30 minutes. Drain & transfer potatoes to wire rack; let dry 10 minutes.

    Transfer potatoes to the oiled baking sheet. Smash each potato under measuring cup until 1/2" thick. Brush potatoes with 1/2 the vinegar & season with pepper. Roast 25 - 30 minutes. Brush with remaining vinegar. Transfer to serving platter - smashed side up & enjoy!!!!
