yukon gold potatoes, peeled and cubed
Bring a large pot of salted water to a boil, add potatoes and cook 10-12 minutes or until tender. Drain potatoes then add back to the pot.
In the meantime, heat milk and butter in a small saucepan over medium heat.
With a hand held mixer at it's lowest speed, slowly add the hot milk mixture to the potatoes.
Add the mascarpone cheese, salt and pepper and then use the hand blender on low to combine.
