Creamy Whipped Potatoes With Chives

Ingredients

3 lb
yukon gold potatoes, peeled and cubed
1 c
milk
2 Tbsp
butter
1/3 c
mascarpone cheese
1/2 tsp
salt and pepper
3 Tbsp
chives

Step-By-Step

1Bring a large pot of salted water to a boil, add potatoes and cook 10-12 minutes or until tender. Drain potatoes then add back to the pot.
2In the meantime, heat milk and butter in a small saucepan over medium heat.
3With a hand held mixer at it's lowest speed, slowly add the hot milk mixture to the potatoes.
4Add the mascarpone cheese, salt and pepper and then use the hand blender on low to combine.
