Creamed Potatoes And Smoked Sausage

- smoked sausage (kielbasa)
- 2 Tbsp
- olive oil
- 1 medium
- 6 medium
- 3 Tbsp
- 32 oz
- chicken stock, or enough to cover potatoes
- 1 c
- salt and pepper to taste
Place sausage, onion, and oil in a large skillet. Sauté for a few minutes, until onion begins to soften.
Peel potatoes and cut into bite-sized pieces.
In a small bowl, make a paste of flour and milk. Stir into potatoes and sausage. Cook over medium heat until thickened.
