Cranberried Sweet Potatoes
apple juice or apple cider
Cut sweet potatoes in half and boil until just soft. Cool in cold water and peel off skins. Place in a baking dish sprayed with PAM.
Combine cranberries, apple juice and brown sugar in a saucepan. Cook for 25 - 30 minutes. Mix in lemon juice and spoon over potatoes.
Combine honey with melted butter and pour over sauce.
Bake in pre-heated 325° oven for 20 minutes or until thoroughly hot.
