1/2 lb
bacon, chopped
3 c
potatoes, peeled, cooked and diced
1 c
tomato, chopped
1/2 c
onion, chopped
1/2 c
green pepper, chopped
1 tsp
garlic, chopped
1/2 tsp
salt
1/4 tsp
pepper
1 1/2 c
shredded sharp cheddar cheese

Directions Step-By-Step

Cook bacon over medium heat in a laaarge deep skillet until crisp, partially drain drippings, reserving some in skillet.
Add vegetables, garlic, salt and pepper, saute in pan drippings about 5 minutes or until tender. Sprinkle with cheese. Make 8 wells for eggs; crack eggs into wells about 2 inches apart. Reduce heat; cover and cook eggs over medium heat 10 to 12 minutes or to desired degree of doneness.
