Ingredients

5-7 boiled cubed potatoes
6 hard boiled eggs- chopped
2 big sour pickles - chopped
1/4 c chopped onion
1/2 c mayo
1 tsp mustard
salt and pepper to taste

Connie's Notes:

This recipe has been in my family forever. Don't know if they made it up or got the recipe from somewhere else. There is never any left when I take it to picnics or back yard BBQ's. Great with Fried Chicken. Also, what's great about this recipe is that you can add or less ingredients as your taste buds dictate.

 

Directions

Put all ingredients in a large bowl.

If you need more moisture, add a little bit more mayo, mustard and or pickle juice.

Mix lightly to combine.

Your Potato salad sounds and looks great Connie, and I especially love the dish you are serving it from. Smile Great Job. I will have to try it using sour pickles, I always use the Gherkins. It really looks good. Thanks for sharing.

i use sweet relish that will take care of the mustard and the pickles and the chopping lol

Yummmmm, I love potato salads. When I make this one I use both dill and B`n B pickles (and sometimes even sneak in a bit of the baby gherkins too Sis Rose)...
My Hubby like it made with the sweet relish too Hanan.

I make potato salad so often in the summertime, I change it up so as not to get bored with it ='D.

Your recipe is almost like my family's
recipe,I'm so glad to see sour pickles! I love them! We don't use mustard or pepper,I add celery seed.

That's what's great about this recipe, you can adjust it to meet your families tastes. Some prefer sweet pickles. This is the way my grandmother made it and we love it like this. Enjoy!
