1 - 8 oz pkgchive & onion cream cheese

1/3 cscallions, about 2 - 3

1/4 cmilk

1/4 tspsalt

How To Make chive & onion cream cheese double baked potatoes

1Position rack in lower part of oven; preheat oven to 400 degrees F. Prick potatoes with fork; coat with oil. Bake on ungreased baking sheet until tender, about 50 - 60 minutes. Let stand until cool enough to handle, about 15 - 20 minutes.

2Horizontally cut top 1/3 from each potato. Scoop potato from skins, leaving 1/4" thick shells. Increase oven temp to 425 degrees F.

3On low speed, beat potato with cream cheese, scallions, milk & salt. Transfer to pastry bag fitted with large star tip. Pipe or spoon filling into shells. (Piping looks prettier) Place shells on baking sheet; sprinkle each with paprika. Bake on lower rack until heated through & browned, about 15 minutes.
