Peel a strip around the center of the potato and quickly put the potato in a saucepan of cold water. Add enough water to cover. Bring to a boil over high heat about 20 minutes until tender but firm. Dont over cook them you dont want mashed potatoes. Drain and put the cover back on to keep them warm.
Melt butter either on the stove or in a microwave safe bowl until melted. Stir in chives and parsley.
Pour butter mixture over potatoes and toss to coat.
