Ingredients For caribbean sweet potato bake

  • 3 c
    sweet potatoes, cooked & mashed (2 lbs.)
  • 2 lg
    eggs, slightly beaten
  • 1/2 c
    dark brown sugar, firmly packed
  • 1/4 c
    butter, melted
  • 4 Tbsp
    dark rum
  • juice from 1 lime & grated peel
  • 1/2 tsp
    nutmeg, ground
  • 2 lg
    bananas, sliced
  • 1 - 20 oz. can
    pineapple, crushed, drained
  • 1 lg
    banana, sliced, garnish
  • parsley

How To Make caribbean sweet potato bake

  • 1
    Combine mashed sweet potatoes with eggs, brown sugar, margarine, rum, lime peel, juice & nutmeg in large bowl; beat until well blended. Fold in diced bananas & pineapple.

    Spoon into shallow 5 C or 8" baking dish, sprayed with nonstick cooking spray. Bake at 375 degrees F., for 40 minutes. Garnish with banana slices & parsley, if desired.
