Ingredients For caribbean sweet potato bake

3 csweet potatoes, cooked & mashed (2 lbs.)

2 lgeggs, slightly beaten

1/2 cdark brown sugar, firmly packed

1/4 cbutter, melted

4 Tbspdark rum
-
juice from 1 lime & grated peel
-
1/2 tspnutmeg, ground
-
2 lgbananas, sliced
-
1 - 20 oz. canpineapple, crushed, drained

1 lgbanana, sliced, garnish

parsley
How To Make caribbean sweet potato bake

1Combine mashed sweet potatoes with eggs, brown sugar, margarine, rum, lime peel, juice & nutmeg in large bowl; beat until well blended. Fold in diced bananas & pineapple.

2Spoon into shallow 5 C or 8" baking dish, sprayed with nonstick cooking spray. Bake at 375 degrees F., for 40 minutes. Garnish with banana slices & parsley, if desired.
