Cajun Potato Salad Brandy's Way

This is one I can't stop using because it is so tasty. You can mash your potatoes or leave to your taste.KEY TO FLAVOR IS THE CAJUN SEASONING. And remember to soak potatoes overnight in water to take out unwanted starch. Makes potatoes fluffy and better tasting.This is a tip from one of you and it works...Thanks girls.

new potatoes
eggs, hard boiled
1/2 to 1 c
chopped onion to taste
1/2 to 1 c
chopped pickles
cajun seasoning (i use tony chechers brand )
2 c
hellmans mayo
3 Tbsp
frenchs mustard
2 Tbsp
sour cream
black pepper


1Boil Potatoes and drain and cool completely.

Dice hard boiled eggs, pickles and onions and place in a large bowl..sprinkle lightly with cajun in frig to set while potatoes cool.

Mash or cube cooled pototoes to your liking.

Mix mayo, mustard sour cream together.

Place potatoes over the chopped veggie and egg , slowly pour mayo mixture over the salad sprinkle with cajun seasonig and lightly stir to mix well.

I saved one egg and a couple of spoons of the pickles and onions for garnish.Sprinkle a little cajun seasoning over all to top. Enjoy

Cool and serve.
